Introducing Elizabeth!

Hi there ABBOG readers. I am Elizabeth Anderson, one of the registered dietitians at NuVal. Now I know, RDs can have a reputation as The Food Police, but ask anyone here in the office, and they’ll tell you, that’s not me!

I am no stranger to highly processed food. It has to be my parents fault, right? I kid; I take responsibility for my love of pink frosting. Still, growing up on Count Chocula and Little Debbie snacks means it’s almost in my DNA to resist higher scoring foods.  I mean, is it wrong to deeply appreciate the sweet nectar of a frosty diet soda first thing in the morning?

But does that mean I’m a bad dietitian? I hope not. I like to look at my diet shortfalls as a sign that I am a ‘healthy-eating work in progress.’ In the 8 years I have worked in weight management, I can tell you, humility and self-compassion are two of the most essential tools for improving your eating. My motto is, when we feel better, we do better.

Can you relate? If so, I look forward to learning more about your struggles to improve your eating while I share my nutrition knowledge, throw in some healthy eating strategies and highlight ways we can improve the quality of our lives by implementing NuVal.

    Welcome to the blog world Elizabeth! I love your motto and look forward to you sharing your nutrition knowledge. It’s refreshing to know that someone in your profession enjoys the foods that score less than 30 and isn’t afraid to share and embrace it!

    Hi, my name is Laura and I’m a chocoholic. I especially love dark chocolate fudge. I limit myself to making it about once a month though. And I include lots of walnut pieces to amp up the NuVal score a little, ha ha. I’m glad I’m not alone in not being able to easily resist foods that are not so good for you. Thanks for the great post, Elizabeth. Great picture too!

    I try to eat as much fruit and vegetables as I can. I eat very little red meat and processed food. BUT, I love nachos with cheese! I am a nacho addict. I have learned over the years to make healthy bean burritos and whole grain tacos which help, but I still need my nacho fix.

    Hi Elizabeth!!! Welcome. I am looking forward to reading your post. I try to eat as healthy as possible, perferrably organic and kicked processed foods out of our house. But I do have some weeknesses when it comes to potato chips and cake. I don’t buy either but will indulge if I am at a social gathering.

    Welcome Elizabeth – I can’t wait to learn from you. My biggest downfall is salt. It is something I love – in foods not necessarily something I put on many foods. So I worry about how much salt is in the foods I eat?

    Hi Elizabeth,
    Looking forward to your advice on eating healthy.I try but it’s not easy with a husband who is a junk food junkie and still has the same waistline as when he was 18(he is 46).
