NuVal is a nutritional scoring system that rates foods on a scale of 1-100, based on how nutritious they are. We are implementing NuVal in grocery stores around the country.

    NuVal may not be in your area yet. But I see the scores while they are "hot off the press" and because of that I am able to make better decisions about what to feed my family.

Unbelievable Chicken

The beautiful weather has arrived in New England!  So, I was itchin to grill this weekend.  I love to grill up big batches of chicken and then refrigerate the leftovers for easy lunches and weeknight dinners.  Chicken is a great choice for the grill.  It gets a 39 on the NuVal scale.  Compare that to 85% lean hamburgers, which get a score of 28, and you’ll pick the chicken, right?

I have a couple of Go To recipes that I typically use, like Martha Stewart’s Grilled Chicken Paillard, but I was feeling adventurous this weekend.  I decided to google a new chicken recipe.  I know, I know, I live on the wild side!

When you search Allrecipes.com  for grilled chicken, the top recipe that pops up is called Unbelievable Chicken.  The submitter of the recipe says, “This unusual combination of common ingredients is fabulous! Everyone who tastes it asks me to share the recipe.  You will love it and the many compliments you get – I promise.”  Hmmmm.  That seemed convincing.  So, I went to work.

First, I got out my ingredients:

Cider Vinegar

Coarse-Ground Mustard

Garlic

Lime

Lemon (I did not have one, so I used lemon juice)

Brown Sugar

Salt

Black Pepper

Olive Oil

For exact measurements, you can check out the recipe here.  I marinated it overnight.

I hate lighting the grill.  We bought a new grill a couple of years ago and I thought it would light easily.  But it does not.  So you have to throw a match into it.  I really hate lighting the grill.   So, I leave that up to my husband.  That means he also ends up cooking on the grill.

He does a great job!

He even took this photo for me because I was off teaching Pilates when he finished grilling the chicken.  What a guy!

So was this chicken unbelievable?  Well, it was very, very good for dinner.  It actually was better the next day when I had is sliced cold on a salad.  I love recipes that taste even better the next day.  So, I would definitely recommend that you try it out.

    This is really simple, but marinate it in your favorite mustard and then grill it, broil it, or bake it. Delicious!

    My all time favorite is from Barefoot Contessa and perfect for tonight’s Cinco de Mayo dinner – Tequila Lime Chicken. SO yummy and definitely better the next day.

    Grill Master husband! Chicken looks very good. I usually do a dry rub on my chix but ocassionally I do fresh diced garlic, terriyaki sauce and olive oil marinade.

    I just throw some chicken breasts in the crockpot, cover with a couple cans of cream of something soup — whatever is on hand: celery, mushroom, chicken etc — healthy request versions, and cook on low for about 8 hours. Then I serve with brown or parboiled white rice (which scores same as brown!). So easy and so good.
