Another great looking dish, Rachel, and I'm looking forward to feeding it to my crew! I have a couple of questions, though: Why do kalamata olives only score a 10 - because of the curing? Why does olive oil, the positive benefits of which have been touted for years, only score at 10 and canola oil a 24? Should we switch to using canola oil now?

Jen - pinto beans can usually be used in any dish where beans are called for even though they are traditionally used in Mexican fare.

YUM!!! That looks so good! I love kale, but have yet to experiment with swiss chard, so I may have to give this recipe a try. I made acorn squash a few weeks ago and it came out great! http://healthylaps.com/2010/02/15/stuffed-acorn-squash/ I'm still trying to figure out something to make with those pinto beans that scored a NuVal score of 100!!! Any ideas?!
